Level 2 Food Safety Courses have now replaced the old 'Basic Food Hygiene Course'. These courses are for those who prepare food which is high risk and/or ready to eat.
It is also a recommendation that anyone who prepares or handles food that is served to clients in vulnerable groups, i.e. the elderly, the sick or the young, should always take the extra precaustion of always undertaking Level 2 Food Hygiene Training.
Who needs a Level 2 Food Hygiene Certificate?
All emplyees who work in the Food Industry, either in the Catering, Manufacturing or Retail Sectors, should complete the Level 2 Food Hygiene and Safety Training if they are handling and/or preparing food. This Level 2 Training Course is specifically designed to provide people with an excellent understanding of Food Hygiene Principles, while also satisfying the legal requirement to undertake Food Hygiene Training.

What areas does this Level 2 Course cover?
This Level 2 Food Safety Course follows the same syllabus as the Chartered Institute of Environmental Health, CIEH. In addition, the traning maps to the UK National Occupational Standards in Food Safety & Hygiene at Level 2. Food Hygiene Regulations requires operatives to train food handlers on Food Hygiene & Safety Principles. Therefore, this course's content covers all of the core elements of Food Hygiene & Safety. Our Level 2 Food Hygiene Training, which has now replaced the old Basic Food Hygiene Courses, follows the same syllabus as the Chartered Institute of Environmental Health (CIEH) and the Royal Society for Public Health (RSPH). They also map to the UK National Occupational Standards in Food Safety & Hygiene at Level 2. Because of this our Food Hygiene Certificates are accepted by all Local Councils in the UK and any Environmental Health Officers who may inspect premises.
How long does the training take?
The Level 2 Food Hygiene Training will take on average 2 hours and 30 minutes to complete. The training is split into 5 different lessons, which will each cover a different area of Food Safety. Each lesson will take approximately 30 minutes to complete. This is only a guidet time and some trainees may take less time to complete the training, while other may need more time. This is not a problem as the course is designed to be entirely flexible to the users needs. This is extremely useful for any trainees that may have learning difficulties, people who are not familiar with using a computer or people who have not previously used E-Learning.
Assessment
The Level 2 Food Hygiene Assessment will take approximately 30 minutes to complete. The assessment is multiple choice and consists of 30 questions. These questons are randomly generated from a question bank of over 90 questions. To pass the assessment and gain your Food Hygiene Certificate you must achieve a score of 67%, 20 out of 30. If for any reason you fail the course we will provide you a resit completely free of charge. This is on the assumption you have completed all of the learning material before attempting the assessment.

What are High Risk Foods?
High Risk Foods are defined as those foods that are likely to be vehicles for food poisoning organisms. They are ready to eat foods and under positive conditions support the growth of pathogenic bacteria. Examples include all cooked meats and poultry, milk, cream and dairy products, cooked eggs, certain sea foods and cooked rice.
Where can i find the Basic Food Hygiene Course?
The Basic Food Hygiene Course has now being discontinued due to changing Food Safety and Hygiene legislation and standards in the European Union. The main one being the introduction of HACCP, (Hazard Analysis Critical Control Point). Because of these changes the Food Hygiene syllabus has being updated. The equivalent course, which follows the new Food Hygiene and Safety syllabus, is the Level 2 Award in Food Safety. This is available in 3 different variations - Catering, Manufacturing and Retail.
What is HACCP?
HACCP, (Hazard Analysis Critical Control Point), is an internationally recognised and recommended Food Hygiene Management System. Its main focus is to identify 'Critical Points' in a proces where Food Safety and Hygiene hazards could potentially occur.
What level of Food Hygiene Training do my staff need?
Food handlers must undertake either instruction or Food Hygiene Training to enable them to handle food safely. By far the most popular of these two options is Food Hygiene Training. If a memeber of staff is handling High Risk Food, they need t undertake a Level 2 Food Safety Courses, so that they can gain their Food Hygiene Certificate. It is the operator of the food business who is responsible in ensuring all staff are trained in Food Hygiene and Safety.
What level of Food Hygiene Training do supervisors and managers need?
Supervisors and Managers of food businesses should undertake the Level 2 Award in Food Safety and acquire their Food Hygiene Certificate. In addition to this those in a supervisory or management role within the food business should also undertake the Level 3 Award in HACCP, thus giving them a much greater understanding of this Food Safety Management System. HACCP is a legal requirement, and every food business must have a HACCP Plan. Completing the Level 3 Award in HACCP will provide the knowledge to produce and maintain your companies bespoke HACCP Plan.
